PROGRAMS BY AGE GROUP

Group 1: Mini Chefs
Technical Focus: Fine motor skills development, introduction to safe knife cuts, basic flavor profiles, and creative artisanal pastry baking.
Dynamics: Interactive individual projects and collaborative kitchen games that build independence and confidence.
Sample Menu: Hand-rolled fresh pasta, scratch-made marinara, technical decorated cookies, and healthy gourmet snacks.

Group 2: Junior Gastronomy
Technical Focus: Advanced knife precision, complex cooking methods, aesthetic plating, acid/fat balancing, and international fine pastry.
Dynamics: Real professional kitchen brigade simulation, fostering leadership, teamwork, and precision technical execution.
Sample Menu: Precision sear proteins, emulsion sauces, fine pastry (macarons, mirror glaze tarts), and international 3-course menus.
DAILY CAMP SCHEDULE & ROUTINE
Welcome & Technical Briefing
Arrival, mandatory laboratory sanitization, uniform check, and interactive breakdown of the day's menu and safety rules.
Practical Session I (Mise en Place)
Selecting, weighing, washing ingredients, and executing initial knife work under direct supervision.
Hydration & Social Break
A supervised short break to rest and socialize outside the active cooking area.
Practical Session II (Cooking & Plating)
Thermal cooking application, technical assembly, and artistic plate design.
Community Lunch & Tasting
Roundtable lunch where students taste, critically analyze their flavor profiles, and share the culinary experience.
Professional Clean-Up Brigade
Station deep cleaning, tool washing, and general kitchen organization.
Daily Wrap-Up & Departure
Distribution of the day’s printed recipe cards and student dismissal.

CAMP POLICIES & CODE OF SAFETY
Kitchen Safety Code
- Mandatory Footwear: Fully closed-toe, non-slip shoes are strictly required (sandals, open Crocs, or thin canvas shoes are strictly prohibited).
- Hair & Accessories: Long hair must be tied back completely. No bracelets, rings, or watches are allowed during cooking sessions.
- Technical Behavior: Running, horseplay with kitchen tools, or operating equipment without explicit instructor authorization is strictly prohibited.
Allergies & Dietary
As culinary leaders specializing in adaptive menus (keto, gluten-free, vegan, and sugar-free), we enforce rigorous cross-contamination protocols. Parents must declare any severe allergies or medical restrictions on the digital registration form.
Cancellation & Refund
- Cancellations 14+ days prior: Full refund minus a $50 CAD fixed administration fee.
- Cancellations 7 to 14 days prior: 100% store credit issued for future catering services, gourmet boxes, or public workshops. No cash refunds.
- Cancellations less than 7 days prior: No refunds or credits can be issued due to advanced raw material procurement and personalized supply ordering.
- Week Transfers: Subject to availability, with no penalty if requested at least 10 days in advance.

With over 20 years of active culinary craftsmanship spanning Venezuela, Panama, Colombia, and now Canada, Chef Jennifer Abeu-Saleh has guided more than 3,200 students through the art of pastry making, cake architecture, and artisanal baking.
As the heart of ABEU-SALEH, Jennifer designs every curriculum personally, blending classic European precision with authentic Latin warmth, ensuring each class is highly technical yet incredibly welcoming and rewarding.
